OUR PHILOSOPHY
Our philosophy is based on doing the best with what we have. We are passionate about experimenting, questioning the established and going beyond the conventional. We believe in constant evolution: we keep what works and improve what has potential, continually refining our winemaking art.
Even if it takes us 100 years!
We have a vineyard in an area and at a time when we have great space and great freedom to propose, experiment and learn.
From the varieties we have planted and the management practices in the field to get the best fruit we can. The winemaking methods along with the technology and equipment we use to transform it into great wines. Also the blends we can make, sometimes unorthodox. For this reason we believe it is an exciting time for winemaking in our region and we have no strings attached to what we can achieve.
Wine Life Cycle
We learned at the University of California, Davis, a saying that we love. We think it sums up very well our approach to the vineyard and wine:
“The plant grows throughout the year and develops the grapes that will be harvested, vinified and bottled; during this whole cycle circumstances intervene and decisions have to be made and after all, when we uncork a bottle… The wine remembers everything!”
